Three Meals You Can Make This Week

I am always looking for new, healthy recipes that please my family. I have some tough critics (kids), and finding dishes that make us all happy is difficult. Here are my top three meals this season:

Whole30 Egg Roll in a Bowl (Paleo)

If you love Chinese food but dislike the calories, this recipe is perfect. It’s Whole 30 and Whole Life Challenge compliant, and even my kids devour the dish when I serve it to them. I have to give props to my cousin, she passed it along to me during her Whole 30 challenge, and now it’s a mealtime staple.

Ingredients

  • 2 tablespoons sesame oil
  • 6 green onions sliced, green and white parts divided
  • 1/2 cup red onion diced
  • 5 cloves garlic minced
  • 1 pound ground pork
  • 1 teaspoon fresh grated ginger
  • 2-3 tablespoons chili-garlic sauce or Whole30 compliant hot sauce, divided
  • 14 ounce bag coleslaw mix
  • 3 tablespoons coconut aminos or soy sauce / tamari if not Whole30 or paleo
  • 1 tablespoon rice wine vinegar
  • 1/8 – 1/4 teaspoon white pepper or black pepper
  • salt to taste

Creamy Chili Sauce

  • 1/4 cup Whole30 mayonnaise ideally my Whole30 immersion blender mayonnaise, recipe in notes
  • salt to taste
  • Whole30 sriracha

Instructions

  1. Heat sesame oil in a large skillet and place over medium heat.
  2. Add white parts of green onions, diced red onion, and garlic and saute, stirring frequently, until red onion begins to soften, about 5 minutes.
  3. Add ground pork, grated ginger, and 1 tablespoon hot sauce or chili-garlic sauce and cook until pork is browned, broken up, and cooked through, about 7-10 minutes.
  4. Add coleslaw mix, coconut aminos or soy sauce, rice wine vinegar, white pepper, and salt, to taste, and stir until well combined. Cook, stirring regularly, until cabbage is tender, about 5 minutes.
  5. Meanwhile, in a small bowl whisk together 1/4 cup mayonnaise and 1-2 tablespoons compliant hot sauce. Add a pinch of salt, to taste. To drizzle, place creamy chili sauce in a small plastic sandwich bag.
  6. To plate: spoon a hearty helping of the pork-cabbage mixture in a serving bowl. Snip off the corner of the sandwich bag with the creamy chili sauce and drizzle over egg roll in a bowl recipe mixture. Garnish with green parts of the green onions and black sesame seeds.

Instant Pot Honey Lime Chicken Wings

If your family is like mine, you are knee deep in fall sports right now. Fall is the best time to utilize your instant pot. You already know my love grows deep for mine, and I have a great, nutritious healthy recipe for Honey Lime Chicken Wings from Whole Kitchen Sink.  These are perfect for Sunday Night Football, or after your child’s volleyball or football practice. 

Ingredients

  • 2 pounds chicken wings (I used a drumstick and wing mix)
  • 3 tablespoons honey
  • 2 tablespoons coconut aminos
  • Juice of 1 small lime or 1/2 large lime
  • 1/2 teaspoon salt (or to taste)

Instructions

  1. In a small bowl, mix together all ingredients except the chicken
  2. In a large Ziploc bag, add chicken and marinade
  3. Refrigerate for an hour, or overnight
  4. Dump the contents of the Ziploc into your Instant Pot
  5. Set to high pressure for 15 minutes
  6. Close the lid and ensure the steam valve is closed
  7. Once done, do a quick release
  8. Drain excess liquid except for approximately 1/2 cup
  9. Set Instant Pot to sauté mode and allow wings to crisp up for about 5 minutes
  10. Or remove wings from Instant Pot and place in a large pan over medium heat
  11. Add in 1/2 cup of the liquid from the Instant pot and crisp them over the stove-top
  12. Remove from heat and serve!

These were such a hit for our family football party. Serve with fresh cut veggies and you’ve got a healthy, yummy dinner.

Crock pot or Instant Pot Clean Turkey Chili

I have mentioned the magic of Jenny Collier’s recipes before, and this link is my go-to when I’m out of ideas for healthy meals. I have made this recipe on the stove-top, in the crock pot, and in the instant pot. Each time, it is a win. Not only do you trick all of your family into eating celery, onions, and green peppers, but you also have delicious leftovers for midweek lunches. 

Ingredients

  • 1.25 lb extra lean ground turkey
  • 1 jar of salsa (16oz)
  • 1 cup of celery, chopped
  • 1 small white onion, chopped
  • 1 green bell pepper, finely chopped
  • 1 28oz can crushed tomatoes
  • 1 28oz can diced tomatoes
  • 1 15.5oz can pinto beans
  • 1 15.5oz can red kidney beans
  • ½ tsp garlic powder
  • ½ tsp salt
  • 2 tbsp chili powder
  • 1 tbsp cumin

Instructions

  1. Place meat and chopped onion into a large pan. Cook until turkey is no longer pink and onion is translucent.
  2. Place meat and onion mixture into a crock pot along with the other ingredients. Cook on high for 4 hours or low for 8 hours.
  3. You may top with fresh onion, shredded cheese, a dollop of Greek Yogurt, etc

The last time I made this, I forgot to add spices, and it was STILL delicious.
